In the world of high-end coffee, this number might seem low, as the professional standard, championed by organizations like the Specialty Coffee Association (SCA), is famously pegged at 9 bars. But is more always better? Not necessarily. It’s a fascinating engineering trade-off.

The 9-bar standard has its roots in post-war Italy. In 1947, an inventor named Achille Gaggia replaced steam-driven systems with a brilliant spring-loaded piston. For the first time, a barista could pull a lever to generate 9 to 10 bars of pressure, forcing water through the coffee with unprecedented power. This didn’t just make coffee faster; it fundamentally changed it. This intense pressure was able to emulsify the coffee's natural oils and extract CO2 trapped within the grounds, creating a stable, flavorful foam—the crema. Modern espresso was born.

It generates more than enough force to overcome the significant resistance of the coffee puck, ensuring water saturates the grounds and extracts the necessary solids and oils. It produces a legitimate espresso, complete with crema. They constantly measure the temperature and intelligently pulse the heating element to keep the water within a single degree of the target.

A simple home machine, powered by an 800-watt heating element, takes a more direct approach. It typically uses a basic thermostat, which functions like a simple on-off switch. It heats the water until it hits a preset temperature, then shuts off. As the temperature drops, it kicks back on. This creates a temperature range rather than a fixed point.
